The Food & Drug Administration (FDA) establishes through its Code of Federal Regulations that all operators of companies that process low-acid (Title 21, part 113, section 113.10) and acidified (Title 21, part 114, section 114.10) foods, with interest in exporting such products to the United States, must operate under the supervision of certified personnel who have completed and passed a training approved by the Commissioner. In order to comply with these requirements, the FDA, based on the official program Better Process Control School (BPCS), authorizes some Process Authorities to provide this training in different countries. BPCS develops throughout its four-day duration, the necessary requirements to understand and properly carry out the control, supervision and work operations with autoclaves, the evaluation of closures, the handling of containers and the safety of canned products, among other aspects.

AIMED AT

The 4-day (32 hours) program is specifically aimed at all personnel who manage, supervise or are in charge of heat treatment operations (sterilization/pasteurization), packaging and container closure, as well as personnel related to aseptic processing in the fish, seafood and vegetable canning industry. In the same way, BPCS is an open training that provides excellent resources for academics, consultants, inspectors and related professionals.
